  • Herring was smoked and processed in boucanes, the Fécampois term for sausage factories, using a technique inherited from the Vikings.

    The last boucane closed its doors in 1996.

    Owned by the Fécamp Département, the boucane du Grand Quai is the only surviving sausage factory in the Fécamp area.
